DESCRIPTION:

The Verdejo variety makes a note differentiator and exclusive of the wines of the area. The period of harvest of the Verdejo variety for our wine begins in the second half of September. Before picking up grapes are analyzed by the sampling in the vineyard the vines and grapes to detect the moment in which the grape has a perfect balance of their components.

ELABORATION:

It makes a maceration of the grape juice) with the skins from 6 to 12 hours, depending on the time to consider the expert and a temperature of 6‐8 °C.  With the maceration is achieved a greater extraction of aromatic compounds and varietal character, as well as enhance the feelings in the mouth.

 

The cleaning process prior to the alcoholic fermentation is long, putting in contact the Various substances with the grape must. Increase the contribution of fruity aromas.

Fermentation is carried out at lower temperatures, 14‐16 OC, which helps to maintain

and intensify the varietal character.

 

After fermentation the wines are kept in a period of time in contact with the fine lees, to

increase the structural characteristics of the production of wine for the fatty acids and

the sensations in the mouth wider and glicericas.

 

TASTING NOTES:

VISUAL PHASE: Pale straw color with green tinges. Clean, bright and well presented. OLFACTORY PHASE: Of average intensity, with a marked varietal character. Highlights the notes of white pome fruits (apple and pear) with pleasant hints of floral (white haw‐ thorn, acacia) well outfitted with herbaceous notes and balsamic (fennel, anise and hay). GUSTATIVE PHASE: Fresh Mouth, rich in nuances. Good expression of verdejo that extends to the end. Structured with a nice acidity and aniseed‐flavored Retro floral with some presence of citrus fruits (grapefruit and Lima).
